Classic Lasagna Meets Vodka Sauce
This spicy vodka lasagna is what happens when two of my favourite comfort foods collide. A rich, spicy vodka sauce loaded with crispy hot Italian sausage gets layered with silky homemade béchamel, melty mozzarella and plenty of parmesan, then baked until bubbling and golden. A drizzle of chili crisp and fresh basil on top takes it over the edge. It’s cosy, indulgent and has just enough heat to keep you going back for another slice. Fair warning: it’s the kind of lasagna that ruins the regular version for you!
Understanding Your Components
- Spicy Vodka Sauce: This is the heart of the dish. Hot Italian sausage gets browned until crispy in spots, then the same pot builds the sauce with onion, garlic, Calabrian chili paste and tomato paste. The vodka is added to deglaze, and it helps release flavours in the tomatoes that water and alcohol-free liquids can’t. Crushed San Marzano tomatoes and a splash of cream make it silky, rich and slightly sweet, which balances the heat from the chili and sausage.
- Béchamel: A classic white sauce made from butter, flour, and warm milk, seasoned with nutmeg and parmesan. It adds a creamy, silky layer that balances the heat of the vodka sauce and keeps the lasagna from drying out. Using warm milk and whisking constantly is the secret to a smooth, lump-free sauce. The nutmeg is subtle, but it gives the béchamel that classic, slightly nutty depth.
- Cheese: Low-moisture mozzarella gives you that gooey, stretchy pull without releasing excess water, while finely grated parmesan adds salty, nutty depth and helps the top turn golden and crisp. Shredding your own mozzarella from a block melts much better than pre-shredded, which is coated in anti-caking agents.
- Lasagna Sheets: Fresh or no-boil sheets both work well here, since they cook right in the oven by absorbing moisture from the sauces. Layering with plenty of sauce is important so the sheets cook through and turn tender instead of dry.
- Chili Crisp and Basil: A generous drizzle of chili crisp over the finished lasagna adds crunch, extra heat and a savoury, toasty flavour. Fresh basil brings a bright, herby freshness that cuts through all the richness.
Tips!
Brown the Sausage Properly: Let the sausage get crispy and golden in spots before moving on. Those browned bits are packed with flavour, and they’re what you scrape up when you add the vodka.
Use the Same Pot: Cook the onion and garlic in the sausage fat left behind. It adds a spicy, savoury depth you won’t get by starting with a fresh pan.
Cook the Tomato Paste Until Darkened: Give the paste a full 2 minutes until it turns a deeper red. This takes away any raw, tinny taste and adds a rich, concentrated tomato flavour.
Let the Vodka Reduce: Simmer until the vodka is mostly gone, 2 to 3 minutes. You want the flavour it brings to the sauce, not a sharp alcohol taste.
Warm the Milk for the Béchamel: Cold milk can cause lumps. Pour the warm milk in slowly while whisking constantly, and keep whisking until the sauce coats the back of a spoon.
Don’t Brown the Roux: Cook the butter and flour for just 1 to 2 minutes until pale and foaming. Browning it will change the colour and flavour of your béchamel.
Layer Evenly: Start with a thin layer of sauce on the bottom of the dish so the sheets don’t stick, then divide the sauce, béchamel, and mozzarella evenly across the layers so every slice has the same balance.
Tent With Foil First: Baking covered for the first 30 minutes steams the pasta sheets until tender, and uncovering it for the last 15 to 20 minutes gives you that bubbling, golden top.
Rest Before Slicing: Let the lasagna sit for a full 15 minutes after baking. This lets the layers set so you get clean, tall slices instead of a sliding pile.
Adjust the Heat: Calabrian chili paste varies between brands, so start with the amount in the recipe and add more if you like it hotter. A spoonful of chili crisp stirred into the béchamel, or a diced fresh chili with the onion, also adds extra heat.
Storage and Reheating Guide
- Fresh Storage: Cover and refrigerate leftovers for up to 4 days. Lasagna often tastes even better the next day once the flavours have settled.
- Reheating in the Oven: Reheat slices covered with foil in a 160°C/325°F oven for 20 to 25 minutes, until hot all the way through. Uncover for the last 5 minutes to crisp the top.
- Reheating in the Microwave: Heat individual slices in 1 minute bursts at medium power until hot, which keeps the cheese and pasta from turning rubbery.
- Freezing Baked Lasagna: Freeze whole or in individual slices, wrapped tightly, for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Freezing Unbaked Lasagna: Assemble in a freezer-safe dish, wrap tightly, and freeze for up to 2 months. Thaw overnight in the fridge and bake as directed, adding 10 to 15 minutes if needed.
- Sauce Storage: Store leftover vodka sauce in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. It’s great on pasta too.
Make Ahead Tips:
- Vodka Sauce Ahead: Make the sauce up to 3 days ahead and refrigerate. The flavours deepen and meld as it sits.
- Béchamel Ahead: Make the béchamel up to 2 days ahead and press plastic wrap directly onto the surface to stop a skin forming. Warm it gently and whisk to loosen before layering.
- Assemble the Day Before: Build the whole lasagna, cover tightly, and refrigerate for up to 24 hours. Add 10 minutes to the covered bake time if going straight from the fridge.
- Shred the Cheese Early: Grate the mozzarella and parmesan up to 2 days ahead and store in airtight containers in the fridge.
- Prep the Garnish: Keep your chili crisp ready, and chop the basil just before serving so it stays bright and fresh.
- Vegetarian Option: Swap the sausage for mushrooms and add extra chili paste. Brown the mushrooms well so they bring a deep, meaty flavour to the sauce.

6 garlic cloves, minced
2 tbsp Calabrian chili paste (or chili flakes)
3 tbsp tomato paste
120 ml vodka
1 L crushed San Marzano tomatoes
1/3 cup heavy cream
3 tbsp butter, cubed
1/3 cup parmesan cheese, grated
1 tsp fine sea salt
½ tsp cracked black pepper
Béchamel
85 g unsalted butter
65 g plain flour
1 L whole milk, warmed
¼ tsp freshly grated nutmeg
1/4 cup parmesan cheese, grated
1 tsp fine sea salt
½ tsp cracked black pepper
Assembly
lasagna sheets (fresh or no-boil)
400 g low-moisture mozzarella, shredded
150 g Parmesan, finely grated
To finish
Small handful of fresh basil, chopped
3 tbsp chili crisp

Method – How to make Spicy Vodka Lasagna
- Brown the sausage. Heat the olive oil in a large heavy pot over medium-high. Cook the sausage, breaking it up, until browned and crispy in spots, about 7 min. Remove with a slotted spoon, leaving the fat in the pot.
- Build the base. Lower heat to medium. Cook the onion until soft, 4 min. Add garlic and chili paste, stir 1 min until fragrant.
- Bloom paste and vodka. Stir in tomato paste and cook 2 min until slightly darkened. Add vodka, scrape up the browned bits, and simmer until mostly reduced, 2-3 min.
- Simmer the sauce. Add tomatoes, cream, salt and pepper. Simmer uncovered 20 min, stirring occasionally, until thickened. Stir the sausage back in with the butter and parmesan cheese, simmer 5 min, then adjust the salt.
- Make the béchamel. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook 1-2 min until pale and foaming (don’t brown). Slowly pour in the warm milk, whisking constantly. Cook, whisking often, until it coats the back of a spoon, 6-8 min. Stir in nutmeg, salt and pepper.
- Preheat the oven to 190°C (375°F).
- Layer. Spread a thin layer of vodka sauce in a 9×13 in (23×33 cm) baking dish. Add a layer of lasagna sheets, then a third of the remaining vodka sauce, a third of the béchamel, and a scatter of mozzarella. Repeat twice more. Finish with the last of the béchamel, remaining mozzarella, and the Parmesan.
- Bake. Cover loosely with tented foil and bake 30 min. Uncover and bake 15-20 min more, until bubbling and golden.
- Rest and serve. Rest 15 min before slicing. Drizzle with chili crisp and scatter with basil.
