Whipped Feta

If you haven’t been living under a rock, you would’ve seen this viral whipped feta trend on Tiktok a couple of months ago (maybe a bit longer – I’m super late to every trend). Aerating feta makes it lighter and creamier; creating an interesting and different way of enjoying this cheese. With the tartness of the roasted tomatoes, it cuts through the creaminess and balance out the cheese.
There are 2 main components to this dish: whipped feta and roasted tomatoes.
- Whipped feta: feta is naturally salty, so please don’t use any salt in this recipe. Go for the reduced salt feta if you can find, it’s fine you can’t too. We’ll be balancing out the saltiness with Greek yogurt and honey for sweetness.
- Roasted Tomatoes: please don’t use normal tomatoes – use cherry tomatoes instead. They’re sweeter and perfect for roasting.
Ingredients
180g feta block (reduced salt if you can find)
50g Greek yogurt
90g cream cheese
3-4 tbsp honey
1 garlic bulb
250g cherry tomatoes
2 sprigs of thyme
Method
- Cut of the top of your garlic bulb to expose the garlic flesh. In a baking dish, add together the cherry tomatoes, garlic bulb, salt, pepper and thyme. Drizzle generously with oil and bake low and slow at 160C / 320F for 45mins-1hr.
- Whipped feta: in a food processor, add in the feta, cream cheese, Greek yogurt, honey and a good drizzle of olive oil. Squeeze out the flesh of the roasted garlic into the mixture. Blitz until smooth.
- Spread the whipped feta onto a plate and top with roasted tomatoes. Serve with toasted bread.
