Cut of the top of your garlic bulb to expose the garlic flesh. In a baking dish, add together the cherry tomatoes, garlic bulb, pepper and thyme. Drizzle generously with oil and bake low and slow at 160C / 320F for 45mins-1hr.
Whipped feta: in a food processor, add in the feta, cream cheese, Greek yogurt, honey and a good drizzle of olive oil. Squeeze out the flesh of the roasted garlic into the mixture. Blitz until smooth.
Spread the whipped feta onto a plate and top with roasted tomatoes. Serve with toasted bread.
