recreating the viral Tanghulu
Tanghulu (糖葫芦) is a traditional Chinese street snack consisting of fruits skewered on bamboo sticks and coated in a hard, glossy sugar shell. Originally made with Chinese hawthorn (haw) berries, modern versions often feature strawberries, grapes, or other fruits. The sugar coating creates a satisfying crackable shell that contrasts with the juicy fruit inside. This sweet treat has recently gained popularity worldwide through social media, appreciated for both its delicious taste and visually striking appearance.
Understanding Your Components
- Fresh Fruits: Strawberries are the classic choice, but many fruits work beautifully! Grapes, blueberries, and mandarin segments offer wonderful alternatives. Make sure to select firm, ripe fruits that aren’t overly soft for the best results.
- Sugar Syrup: I have a microwave trick for you guys! Traditionally made in a heavy-bottomed wok – The sugar syrup needs to reach the hard-crack stage (300-310°F/149-154°C) to create that perfect glass-like coating. Use a candy thermometer ensures precision, but you can also test by dropping a small amount into cold water – it should form hard, brittle threads.
- Skewers: Bamboo skewers work perfectly for this treat. Before using, soak them in water for about 15 minutes to prevent any splitting when inserting into firmer fruits. Make sure your fruits are securely positioned on the skewer to maintain stability during the dipping process.
Tips!
Storage and Reheating Guide
- Tanghulu is best enjoyed immediately after the coating has hardened (typically 5-10 minutes)
- If needed, store in a cool, dry place for up to 2 hours – avoid refrigeration as moisture will soften the candy coating
Make ahead tips:
- Prepare your fruits and skewers in advance and store in the refrigerator (up to 24 hours)
- Make sure fruits are completely dry before dipping
- Create the sugar syrup just before serving for the best texture and appearance

1/3 cup water
Fruits of your choice (strawberries are great options)


Method
- Prepare your fruit skewers and an ice bath ready
- In a microwave-safe jug/bowl, combine the sugar and water. Do not stir!
- Into the microwave for 1 minute at a time until the sugar syrup turns slightly golden (mine took 8 minutes)
- Quickly but carefully dip your fruits into the hot sugar syrup and quickly into the ice bath for 10 seconds. Transfer the tanghulu onto a plate and enjoy!
