The most creamy and indulgent garlic bread.
This chicken alfredo garlic bread takes two of the most comforting foods out there and smashes them together into one incredible dish. Crispy, golden garlic bread gets topped with tender, seasoned chicken and a rich, garlicky parmesan alfredo sauce that’s thick enough to actually stay on the bread. It’s the indulgent offspring of 2 of my favourite foods.
Understanding Your Components
- Seasoned Chicken: Chicken breast gets seasoned simply with smoked paprika and garlic powder, which adds warmth and depth without overcomplicating things. Slicing or dicing the chicken after cooking makes it easier to distribute evenly over the bread and ensures every bite gets a good amount. Smoked paprika in particular adds a subtle smokiness that pairs beautifully with the rich, creamy alfredo sauce.
- Homemade Alfredo Sauce: This is a classic butter-garlic-cream sauce that’s simple but requires attention. Butter and minced garlic form the aromatic base, and heavy cream gets reduced until it thickens slightly before parmesan is whisked in for that signature rich, cheesy flavor. The key is using good quality parmesan and adding it off the heat so it melts smoothly instead of clumping or turning grainy.
- Garlic Base: Just like the other garlic breads, this starts with a flavorful garlic butter spread on the bread and toasted first. This creates a barrier against the alfredo sauce and chicken, preventing the bread from getting soggy, while adding an extra layer of garlicky flavor underneath the creamy topping.
- Bread Choice: A rustic loaf like pane di casa (Italian house bread) is perfect – it has a sturdy crust that holds up to all the toppings and a soft, airy interior that soaks up the garlic butter. You want something with structure and flavour, not flimsy sandwich bread.
- Mozzarella Topping: Grated mozzarella on top creates that essential cheese pull and golden, bubbly finish. It melts beautifully under the broiler and adds a mild, creamy element that doesn’t compete with the garlicky, tangy spinach artichoke mixture. Fresh mozzarella would be too watery here – stick with low-moisture, shredded mozzarella.
Tips!
Don’t Overcook the Chicken: Cook the chicken until just done and still juicy – it’ll get a bit of extra time in the oven once assembled, so slightly undercooking at this stage prevents dry, rubbery chicken later.
Build the Alfredo Slowly: Melt the butter and sauté the garlic gently over medium heat – you want it fragrant, not browned or burnt, which turns bitter. Add the cream and let it come to a gentle simmer, allowing it to reduce and thicken slightly before adding cheese.
Add Parmesan Off the Heat: Take the pan off the heat before whisking in the parmesan. Adding cheese to liquid that’s too hot can cause it to seize up and become grainy instead of smooth and silky.
Season Generously: Both the chicken and the alfredo sauce need a good amount of salt and pepper – cream mutes seasoning, so taste as you go and adjust before assembling.
Toast the Garlic Base First: Just like your other garlic breads, toast the garlic butter layer under the broiler until lightly golden before adding the chicken and sauce. This prevents sogginess and builds flavor from the bottom up.
Sauce Consistency Matters: Your alfredo should be thick enough to sit on top of the bread without running off immediately. If it’s too thin, let it reduce a bit longer on the stove before assembling.
Watch the Broiler: Keep a close eye once it’s under the broiler – the cheese can go from perfectly melted and golden to burnt in under a minute.
Storage and Reheating Guide
- Alfredo Sauce Storage: Store in an airtight container in the refrigerator for up to 3 days. It will thicken as it cools – thin with a splash of cream or milk when reheating.
- Cooked Chicken Storage: Store seasoned, cooked chicken in the refrigerator for up to 4 days in an airtight container
- Assembled Bread: Best eaten immediately while hot and bubbly
- Reheating: Reheat leftover slices in a 375°F oven for 8-10 minutes until warmed through, or air fryer at 350°F for 5 minutes
- Freezing: Freeze alfredo sauce separately for up to 1 month. Thaw and reheat gently, whisking to bring back the smooth texture, before using.
Make Ahead Tips:
- Cook Chicken Ahead: Season and cook chicken up to 2 days ahead and store refrigerated. Slice and warm briefly before assembling.
- Alfredo Sauce Ahead: Make the sauce up to 2 days ahead and refrigerate. Reheat gently on the stove, whisking in a splash of cream to loosen it back up.
- Garlic Butter Ahead: Prepare your garlic butter base up to 1 week ahead, just like your other garlic breads
- Prep Station: Have chicken cooked and sliced, sauce made, and bread ready to toast so final assembly and broiling takes just minutes


Ingredients
(this recipe uses half a loaf of bread)
1 loaf of bread (i used pane di casa)
Mozzarella cheese, grated for topping
Parsley, for garnish
Garlic Butter:
3 garlic cloves, minced
125g butter, softened
2 tbsp parsley, minced
1 tsp salt
Chicken:
1 chicken breast, halved length-wise
1/2 tbsp smoked paprika powder
1/2 tbsp garlic powder
salt
Alfredo Sauce:
2 tbsp butter
4 garlic cloves, minced
1 cup (or 240ml) heavy cream
1/2 cup parmesan cheese, grated
salt + pepper


Method – How to make Chicken Alfredo Garlic Bread
- Preheat your oven to 180C/350F.
- Garlic Butter: Prepare you garlic butter but combining all the ingredients into a bowl and mix well.
- Chicken: season your chicken pieces generously with the smoked paprika powder, garlic powder and salt. In a pan over medium heat with a drizzle of olive oil, add in the chicken pieces. Cook until tender, juicy and slightly undercooked (the chicken will finish cooking in the oven later). Remove the chicken from pan and set aside to rest. Slice into strips.
- Alfredo Sauce: In the same pan, add in the butter and garlic, and saute for a few minutes until slightly golden. Add in the cream and simmer to reduce until the sauce is thick. Add in the cheese and season with salt and pepper to taste. When you scrap your wooden spoon against the pan, you should be able to see the bottom of your pan quite well, that’s when you know it’s thick enough.
- Assemble: Cut your bread loaf in half and spread the garlic butter mixture onto one half. Spread 3/4rd of the sauce onto the bread and top with the chicken slices. Spread the remaining sauce onto the chicken and top with mozzarella cheese. Place the bread under the broiler and toast until slightly golden. Remove the bread from the oven.
- Garnish the bread with parsley. Slice to serve.
