Preheat your oven to 180C/350F.
Garlic Butter: Prepare you garlic butter but combining all the ingredients into a bowl and mix well.
Chicken: season your chicken pieces generously with the smoked paprika powder, garlic powder and salt. In a pan over medium heat with a drizzle of olive oil, add in the chicken pieces. Cook until tender, juicy and slightly undercooked (the chicken will finish cooking in the oven later). Remove the chicken from pan and set aside to rest. Slice into strips.
Alfredo Sauce: In the same pan, add in the butter and garlic, and saute for a few minutes until slightly golden. Add in the cream and simmer to reduce until the sauce is thick. Add in the cheese and season with salt and pepper to taste. When you scrap your wooden spoon against the pan, you should be able to see the bottom of your pan quite well, that's when you know it's thick enough.
Assemble: Cut your bread loaf in half and spread the garlic butter mixture onto one half. Spread 3/4rd of the sauce onto the bread and top with the chicken slices. Spread the remaining sauce onto the chicken and top with mozzarella cheese. Place the bread under the broiler and toast until slightly golden. Remove the bread from the oven.
Garnish the bread with parsley. Slice to serve.
