Kimchi Grilled Cheese

My secret to the perfect grilled cheese.
It’s 2022, we don’t tolerate boring grilled cheeses, we’re stepping it up. Yes, we’re adding kimchi. Now stay with me on this one, I know what you’re thinking but trust me, a little funk takes it up a whole ‘nother level. The kimchi cuts through the greasiness and gives it a little of a spicy umami-ness that will keep you on your toes and wanting more. Trust me on this one – try it before you say “no”.
Also, I’ll be sharing with you a few tips and tricks on how I get my grilled cheese perfected grilled. Hint: it involves lots of butter. Before any of you complain about the grease, it’s a grilled cheese, you’re not going to eat it everyday so don’t worry about it 🙂
Ingredients
2 slices of bread (I used Pane Di Casa any plain white crusty bread will do)
mozzarella cheese
cheddar cheese
butter
kimchi
No measurements this time. Just add as much cheese as your heart can take 🙂
Method
Add your cheeses and kimchi in-between your 2 slices of bread.
In a pan over low heat, add a tablespoon of butter and leave to melt. Once melted, add your sandwich into the pan, press down on the sandwich to help the cheese melt and leave to toast until golden brown.
Once the other side is golden brown, flip your sandwich and quickly add another tablespoon of butter into the pan. Carefully move the sandwich around so that the butter can slide underneath the bread. Toast until golden brown.
Tip: don’t let your pan become dry, there should be a thin layer of fat for the bread to crisp up perfectly. When your pan gets dry, add in a nob of butter and let the bread absorb it as it crisps up.
