Ultimate dessert this season
Mixed Berry Cobbler, or Crumble – delicious tangy berry compote with a biscuit-like crumble on top. Whether it’s Summer or Winter, this dessert is so deliciously served warm with icy dollops of ice cream. The best part about this recipe is you can use whether berries you have on hand, and it’s a great way to use berries that are about to go bad.
There are 2 main components to this dish: The berry compote and the crumble.
- The compote: as we are all well-aware, my desserts are for the not-too-less palates. If you prefer a sweeter compote, you can add in an extra few tablespoons of sugar into the mixture. Cinnamon is totally optional but I like the flavour when paired with the berries.
- Cobbler/crumble: This crumble is on the crispier side and very biscuit-like. You can definitely add in oats if that is something you prefer in your crumble. Just substitute a portion of the flour for oats.
Ingredients
Berry Compote:
1 cup plain flour
1/3 cup sugar
1 tsp baking powder
½ cup cream
100g butter, cubed
½ tbsp Cinnamon
Crumble:
400g berries
½ cup sugar
2 tbsp cornstarch
Lemon zest
Method
- Preheat oven at 180 C / 350 F.
- In a bowl, combine flour, sugar and baking powder. Rub in the cold butter until the mixture resembles wet sand. Pour in the cream and mix until combined (Don’t overmix).
- In a separate bowl, combine the mixed berries, sugar, cornstarch and lemon zest.
- Transfer the berry mixture into a baking dish then top with dollop of the crumble mixture. Brush over the crumble with a bit of heavy cream and sprinkle over raw sugar for the extra crunch.
- Bake at 180C / 350F for approximately 30 minutes or until the crumble is golden brown. Serve warm with ice cream
