Berry Cobbler

Ingredients

Crumble/Cobbler

  • 1 cup plain flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 cup cream
  • 100 g butter, cubed
  • 1/2 tbsp cinnamon

Berry Compote

  • 400 g berries
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • Lemon zest

Instructions

  • Preheat oven at 180 C / 350 F.
  • In a bowl, combine flour, sugar and bakingpowder. Rub in the cold butter until the mixture resembles wet sand. Pour inthe cream and mix until combined (Don’t overmix).
  • In a separate bowl, combine the mixed berries,sugar, cornstarch and lemon zest.
  • Transfer the berry mixture into a baking dishthen top with dollop of the crumble mixture. Brush over the crumble with a bitof heavy cream and sprinkle over raw sugar for the extra crunch.
  • Bake at 180C / 350F for approximately 30 minutesor until the crumble is golden brown.
