Chilli Oil Noodles

Stir-through noods.
I remember when I was a poor uni student juggling between loads of assignments and part-time work, this was one of my to-go meals to make. It’s cheap and is packed full of flavour.
If you’re looking for a quick and easy dinner that’s also delicious, this is it! Noodles tossed in a spicy and flavourful oil that takes minutes to put together. Sizzling your ingredients with hot oil brings out their flavours and aroma, making it the perfect sauce to coat your noods!
Ingredients
1 serving of your favourite noodles
1 stalk green onion, chopped
2 sprigs coriander, chopped
3 tbs neutral/ vegetable oil
1-2 garlic cloves, grated
1 tbs ginger, grated
1 tbs Korean crushed chilli flakes
1 tbs sesame seeds
1 tbs soy sauce
1 tbs black/red vinegar
Salt to taste
cucumber, cut into thin strips for topping
Don’t use normal chilli flakes, Korean gochugaru is the way to go. It’s flavourful, packs a punch and adds a nice red hue to your noods.
Method
Cook your noodles as instructed on package
In a bowl, add all the ingredients together except the oil and noodles.
In a separate pan, heat neutral oil until sizzling hot or you can see steam coming off the oil. [Watch your oil! Don’t leave the stove. Once you can slightly see steam, remove immediately, otherwise it will catch on fire]
Pour hot oil over the ingredients in your bowl. Be careful, the oil is very hot and it will spatter. Please please please be careful!
Add in your cooked noodles, mix well and top with cucumber. Enjoy!

- 1 tbsp sesame seeds
- 1 tbsp soy sauce
- 1 tbsp black/red vinegar
- Salt
- cucumber, cut into thin strips for topping
Instructions
- Cook your noodles as instructed on package
- In a bowl, add all the ingredients together except the oil and noodles.
