The viral upside down onion tarts
Let me share my take on these incredibly simple yet impressive tarts that have taken social media by storm! Inspired by @lilygbakes, I’ve adapted the recipe using sweet shallots for an extra special touch. These tarts are not only delicious but also create a fun, interactive cooking experience.
Why This Recipe Works
The genius of this recipe lies in its simplicity and the caramelization process. As the shallots cook underneath the pastry, they become wonderfully sweet and tender, while the puff pastry creates a perfect golden crown when flipped. The addition of feta at the end adds just the right touch of salty contrast. These tarts are so simple and quick to make. You only need 10 minutes for prep work and you probably already have these ingredients on hand.
Understanding Key Components
- Shallots: Shallots provide a sweeter, more delicate flavor than regular onions. When cooked slowly under the pastry, they develop a rich, caramelized flavor that becomes the star of the dish. You can substitute with regular brown onion but the flavour will be much stronger and can be overpowering, just make sure you slice it up and don’t use the whole onion.
- Flavours: The combination of olive oil and balsamic creates a rich base that infuses the shallots as they cook. You can sub these out for:
- Olive oil: other options include herb-infused oils, truffle oil
- Balsamic vinegar: other options include aged balsamic vinegar, Honey balsamic, red wine vinegar
- Puff pastry: store-bought puff pastry is the way to go! Homemade puff pastry is a long and tedious process so if you don’t have the time for it, i highly recommend store-bought! Just make sure your puff pastry is nice and cold, you can thaw it out 5 minutes before using.
Tips
- Keep pastry cold. We don’t want the butter in the puff pastry to melt before it hits the oven, otherwise your pastry will not puff up!
- Cut pieces slightly larger and make sure your pastry covers the shallots entirely.
- Let cool slightly before flipping
Storage and Make-Ahead Tips
- You can prepare shallots ahead of time
- Keep pastry frozen until needed and assemble just before baking
- Best served warm and eaten within 2 hours for best taste.
Ingredients
Olive oil (I used garlic infused olive oil for extra flavour)
Balsamic glaze
Thyme
6-8 shallots, peeled & halved
1-2 puff pastry sheets
Feta cheese, crumbled
Method
- Preheat your oven to 200C/400F and line your baking sheets with baking paper.
- For each tart, drizzle around 1 tbsp of olive oil onto the parchment, followed by a drizzle of balsamic vinegar, thyme, salt and pepper.
- Decoratively arrange your shallot halves onto the mixture and top with a rectangle piece of puff pastry that is big enough to cover the shallots. Brush with some egg wash and bake for 25-30 minutes or until golden brown.
- Once baked, let cool slightly. With a bench scraper, carefully flip the tarts. Top with a sprinkle of feta cheese.
