This elevated take on feta cheese transforms the traditional crumbly texture into a luxuriously smooth spread, perfectly complemented by sweet roasted tomatoes and garlic. The combination creates an impressive appetizer that’s both sophisticated and simple to prepare.

Ingredients
180g feta block (reduced salt if you can find)
50g Greek yogurt
90g cream cheese
3-4 tbsp honey
1 garlic bulb
250g cherry tomatoes
2 sprigs of thyme
Method
- Cut of the top of your garlic bulb to expose the garlic flesh. In a baking dish, add together the cherry tomatoes, garlic bulb, salt, pepper and thyme. Drizzle generously with oil and bake low and slow at 160C / 320F for 45mins-1hr.
- Whipped feta: in a food processor, add in the feta, cream cheese, Greek yogurt, honey and a good drizzle of olive oil. Squeeze out the flesh of the roasted garlic into the mixture. Blitz until smooth.
- Spread the whipped feta onto a plate and top with roasted tomatoes. Serve with toasted bread.
